We Beat the Beets!

From start to finish- we planted some beet seeds this year in early March.  We prepared the soil with just a bucket of dry chicken manure and then put the seeds around our flowers and lime tree in our circle planting box.  This box is made of concrete blocks, and we tried to plant a beet in each hole of the blocks, but they didn't grow well.  The seeds in the middle did the best.  After putting the seeds into the circle trench dug, we filled the top of the trench with just one inch of miracle grow.  We watered it once daily and then just had to wait.  We harvest this week. May 20th.

Notice that the beets in the cider block holes did not grow.  A few sprouted, but soon died and were removed.  The rest is over growing the box!

As the heat increased in May, the beets started to wilt and show stress.  To save the sweetest flavor, I harvested the beets while they were still small and before the heat could zap them of their perk.

Pulled and washed!

We are now ready to pickle them.  Pickled beets are my daughters favorite way to eat this veggie.
